Just keep it simple!

Every weekend is pretty much the same. Up before the sun, eat on the run while getting ready to ride or heading to a race. This weekend I had the luxury of racing after 1pm! Although this did force me to miss my 2:30pm coffee encounter, it did allow me to sleep in and eat at a table!

Now people were asking me what in the world i got going on here! It isn't part of any crazy plan or diet, just some of the things that make me feel full and strong and capable of tackling the days duties on the bike!

Then a banana, strawberries, greek yogurt, random granola, and almond milk
On the plate we have egg whites with spinach and feta! YUM! with a side of sliced avocado and cherry tomatoes.

Most of these things I have in stock all the time, everything low on the processing level, natural and simple. The hardest part was getting the egg whites in the pan without any yellows!

So eating a balanced breakfast isnt as hard as it seems! Although an Eggo and a pop tart may be a bit faster, your gonna feel a little bit more satisfied if you take a few minutes, and grab something fresh!

  1. i have to know - why are egg yellows not to be eaten? it seems like diets that are about WHOLE foods and good nutrition would eat the...WHOLE food.

    I'm truly curious, not just being judgmental! ;)

  2. Excellent question friend! So, remember when we were homeschoolers and caffeine was evil, pepper gave you ulcers and meat was for heathens? well i eat all of those now. But the yokes, when i was lifting a lot of weight, were "frowned" upon because their cholesterol and the whites are pure protein. so we never ate them! So i need to retrain that part of my brain to accept them. I think they taste weird too. But i have read a lot lately that they are in fact JUST FINE and actually good to consume! I will try tomorrow! ; )

  3. aha! that's good to hear. I like eggs a lot better when they are pasture-raised, rather than store bought (even the organic, "free-range, yada yada ones). Maybe you can find some there to try. Actually, Aunt Patty Catalano has chickens right there in Redlands - you should ask her for eggs!!! :)

  4. Half the protein in an egg is in the yolk so you're throwing out good stuff along with the bad. Most of the cholesterol inside us is made by the liver; the amount we get from eggs is miniscule in comparison.
